Mexican Grilled Corn Cobs

This vibrant dish features sweet, charred corn on the cob, coated in a rich blend of TASTEOLOGY Guacamole Seasoning, garlic olive oil, and melted butter. Topped with crumbled feta cheese, fresh parsley, a squeeze of lime, and a sprinkle of Rock Salt and Gourmet Pepper, each bite offers a perfect balance of savory, tangy, and slightly spicy flavors. It’s a deliciously irresistible side that elevates any meal!

Preparation time

  • Total: Approximately 15 minutes

Ingredients

  • 2 corn cobs
  • 6 tbs TASTEOLOGY Guacamole Seasoning
  • 2 tbs TASTEOLOGY Garlic Olive Oil
  • 3 tbs salted butter, melted
  • TASTEOLOGY Rock Salt
  • TASTEOLOGY Gourmet Pepper
  • 1 handful of fresh parsley
  • 1 fresh lime
  • 2 tbs feta cheese, crumbled

Instructions

  1. Cut corn cobs lengthwise into 4 long pieces
  2. Mix TASTEOLOGY Garlic Olive Oil, melted butter and TASTEOLOGY Guacamole Seasoning into a paste
  3. Rub the corn with the paste
  4. Roast the corn on the BBQ or in oven, turning every few minutes
  5. Remove from BBQ and season with TASTEOLOGY Great Barrier Reef Rock 
    Salt, TASTEOLOGY Gourmet Pepper and some fresh lime juice
  6. Arrange on a plate and garnish with chopped fresh parsley and feta cheese
  7. Enjoy!
